The first thing to see is the body of the griddle. it should be smooth and flat for optimum performance. The flat surface ensures maximum contact with the cooktop. The smoother the surface, the better the cooking experience. A raised middle with outer edges depressed is a big NO.
Go for a thick gauge griddle. It will be sturdy and firm. It will lead to good temperature controls and even heat distribution.
A Stable griddle is a foremost requirement while cooking as we do not want the pan to slip off. Use silicone cooking mats for added stability.
If environmental concerns matter, go for an eco-friendly option. It basically means no harmful chemicals are released into the atmosphere during its manufacturing and during its use.

- If you are restricted on space, go for a lightweight griddle which you can stack or store in a cabinet. If space is not an issue a medium-weight griddle is a good option. A heavyweight griddle becomes difficult to manipulate.
- If you camp regularly, there are many griddles which are portable and can be used on cooktops indoors and over campfires and barbeques.
